Weight Loss Challenge: Day 12 - Nutrition Info

Here's where today's intake ended up:

  • Calories - 2,564
  • Protein - 223 grams
  • Carbs - 103 grams
  • Fat - 140 grams

Most of today's carbs (58 grams) came from a 1/2 cup of quinoa. If you've never tried quinoa, you don't know what you're missing. It has more nutritional punch than couscous or brown rice, and has a slightly nutty flavor. Plus, it's easy to make a big batch and reheat as needed. It is very versatile and mixes well in many recipes. You can find it at stores like Whole Foods and health food stores, and even some larger grocery chains. While it is a little higher on the GI scale than I would normally recommend, it is fine to mix it in on occasion.
